Fat, oil and grease, high BOD, CIP chemicals and sharp pH swings — food and dairy effluent is very biodegradable but unforgiving of poor design. We build DAF-plus-anaerobic-plus-aerobic trains that stay stable through production shifts and CIP cycles.
Dairy effluent (whey, milk losses, CIP) runs 1,500–4,000 mg/L BOD with FOG and pH from 2 to 12; breweries and beverage plants add sugar-rich, high-flow streams and caustic; meat and fish processing add blood, FOG and nitrogen. BOD/COD ratio is high (0.5–0.7), so biology works well — provided FOG is removed first and pH is controlled.

If FOG exceeds ~50–100 mg/L or TSS is high, yes — biology downstream will foul and foam without it. For light streams a well-designed grease trap and equalisation may suffice.
Above roughly 2,000 mg/L BOD, anaerobic pre-treatment pays back through lower aeration power and smaller aerobic tanks, and yields biogas usable in the boiler.
